Mexican Tuna Salad Bowl
Ahh, zesty jalapeño tuna, the true spice of life and hero of our Weight Watchers® Mexican Tuna Salad Bowl. Light and simple, we make this bowl using our tuna jalapeño pouch to keep things easy and add more flavor this fiesta.
Ingredients
- 1 Bumble Bee Tuna Jalapeno Pouch (1 SP)
- ¼ cup frozen corn, defrosted
- ¼ cup black beans (1 SP)
- ½ cup cooked white rice (3 SP)
- ½-1 teaspoon cilantro, chopped
- 1 teaspoon lime juice
- 1 cup romaine lettuce, shredded
- ¼ cup fat-free pico de gallo or chunky salsa
- 1 teaspoon jalapeño peppers, optional
- ¼ - ½ lime
Directions
Heat up Bumble Bee Tuna, corn and black beans (we microwaved each individually).
Toss cooked white rice with cilantro and lime juice.
Assemble a bowl with lettuce, rice, Bumble Bee Tuna, corn, black beans, salsa and optional jalapeños.
Squeeze lime on top as dressing.
