Basic Best Salmon Loaf

There’s a reason we put best in the name. Not only will this salmon loaf put the meatloaf of your childhood to shame (no offense mom), it’s super easy to make and affordable.
Make it even more epic with your favorite tartar sauce, cocktail sauce, or hot, white cream sauce.
Ingredients
- 1 can (14.75 oz) Salmon, drained and flaked (remove skin & bones as desired)
- 2 cups soft bread crumbs
- 1/3 cup diced onions
- 1/4 cup low-fat milk
- 2 large fresh eggs
- 2 tablespoons chopped fresh parsley
- 1 tablespoon lemon juice
- 1 teaspoon dry dill weed
- 1/4 teaspoon ground black pepper
Directions
Preheat oven at 350 degrees F.
Drain salmon and reserve 2 tablespoons liquid. Combine salmon, reserved liquid, bread crumbs, onion, milk, eggs, parsley, lemon juice, dill weed and black pepper.
Place mixture in well-greased 8 1/2 x 4 1/2 x 2 1/2 inch loaf pan or shape into loaf on greased baking pan.
Bake for 45 minutes.
