Greek Salad Tuna Burgers with Lemon-Dill Yogurt

A salad and a burger all in one, this fresh, protein-packed Greek Salad Tuna Burger combines all those classic Greek flavors with premium delicious tuna, topped with a finger-licking lemon-dill yogurt.
Ingredients
Patties:
- 2 (5-oz cans) Bumble Bee® Chunk Light Tuna in Water, drained
- Zest of 1 lemon and Juice of 1 lemon
- 1 tsp red wine vinegar
- 1 tsp Italian seasoning + ½ tsp set aside
- 2 tbsp mayonnaise
- ¼ cup minced red onion
- ½ tsp garlic powder
- ½ tsp onion powder
- ½ cup crumbled Feta
- 1 egg
- ¼ tsp Kosher salt
- ¼ cup breadcrumbs + ½ cup set aside
Lemon-Dill Yogurt:
- 1 cup Greek yogurt
- 4 cloves garlic, minced
- 1 tsp lemon zest
- 1 tbsp lemon juice
- 2 tbsp chopped fresh dill
- Kosher salt and fresh cracked pepper to taste
Cucumber-Tomato Salad:
- ½ cup seeded and diced tomatoes
- ½ cup seeded and diced cucumbers
- ½ cup minced red onion
- 2 tbsp diced kalamata olives
- 2 tsp minced parsley
- 2 tsp red wine vinegar
- 2 tsp olive oil
- Kosher salt to taste
Other:
- 2 tbsp Olive Oil for frying
- 2 cups shredded Romaine lettuce
- 4 Brioche buns
Directions
In a large mixing bowl, combine tuna, zest, and juice of lemon, Italian seasoning, red onion, mayo, garlic powder, onion powder, feta, red wine vinegar, egg, and salt. Mix thoroughly; add breadcrumbs and mix again. Form into 4 equal-sized patties. Put formed patties on a plate and place in refrigerator, covered, to chill until firm, about 20-30 minutes (or up to 6 hours, if prepping in advance).
Meanwhile, in a medium bowl, whisk together the yogurt, garlic, lemon zest, lemon juice, and dill. Season with salt and pepper. Chill until ready to use.
In a small bowl, combine tomatoes, cucumbers, red onion, olives, parsley, extra virgin olive oil, and red wine. Salt to taste. Set aside.
When ready to cook patties, combine ½ cup breadcrumbs, ½ tsp Italian seasoning and a pinch of salt in a shallow bowl or rimmed plate. Coat patties all over in breadcrumb mixture.
Heat 2 tbsp olive oil in a large skillet over medium-high heat. Once the oil is heated, add tuna patties and cook until lightly browned and crispy, about 5 minutes per side.
Prepare each burger
Liberally spread yogurt across bottom burger bun and put a handful of shredded lettuce on top. Place patty on lettuce, and top with cucumber-tomato salad and top bun. Serve.
