Ingredients

  • 1 – 12oz can Bumble Bee® Solid White Albacore Tuna
  • 1 tablespoon olive oil
  • 1 small yellow onion, finely chopped
  • ½ garlic clove, minced
  • 4 cups chicken broth
  • 1 teaspoon Kosher salt
  • ¼ teaspoon black pepper
  • 1 – 15oz can cannellini beans, drained and rinsed
  • 2 cups packed fresh spinach leaves, rough chopped (can substitute bok choy for extra crunch)
  • Lemon wedges for serving

Directions

Heat oil in a medium pot and add onion. Cook about 5 minutes until softened, then add garlic and cook 1 minute more.

Add broth, salt, pepper, tuna and beans. Bring to a slight boil, then turn down and simmer about 15 minutes.

Stir in spinach and cook until fully wilted, about 2 minutes.

Serve hot with lemon wedges.
