TERIYAKI TUNA BANH MI

Ingredients
- 1 pouch (2.5 oz.) Bumble Bee Teriyaki Seasoned Tuna
- ¼ cup rice vinegar
- 2 tablespoons sugar
- 2 tablespoon water
- ¼ cup matchstick cut carrot
- 2 tablespoons thinly sliced radishes
- 1 tablespoon thinly sliced jalapeno pepper
- 1 5-inch portion French baguette
- 2 tablespoons reduced fat mayonnaise
- 1 teaspoon fresh lime juice
- 1/8 teaspoon hot sauce
- 1/3 cup thinly sliced cucumber
- 1 tablespoon pickled ginger
- 1 tablespoon cilantro leaves
- 1 teaspoon snipped fresh basil
- ½ teaspoon snipped fresh mint
Directions
Combine vinegar, water and sugar in a glass bowl, microwave 1½ minute.
Add carrot, radishes and jalapeno to bowl, let stand until cooled about 15 minutes; drain well.
Split baguette in half lengthwise.
Combine mayonnaise, lime juice and hot sauce; spread over bottom half of baguette.
Layer cucumber, drained vegetables, pickled ginger and tuna over mayonnaise.
Combine cilantro, basil and mint, sprinkle over tuna.
Cover with baguette top.
