Ingredients

  • 1 pouch (2.5 oz.) Bumble Bee Teriyaki Seasoned Tuna
  • ¼ cup rice vinegar
  • 2 tablespoons sugar
  • 2 tablespoon water
  • ¼ cup matchstick cut carrot
  • 2 tablespoons thinly sliced radishes
  • 1 tablespoon thinly sliced jalapeno pepper
  • 1 5-inch portion French baguette
  • 2 tablespoons reduced fat mayonnaise
  • 1 teaspoon fresh lime juice
  • 1/8 teaspoon hot sauce
  • 1/3 cup thinly sliced cucumber
  • 1 tablespoon pickled ginger
  • 1 tablespoon cilantro leaves
  • 1 teaspoon snipped fresh basil
  • ½ teaspoon snipped fresh mint

Directions

Combine vinegar, water and sugar in a glass bowl, microwave 1½ minute.

Add carrot, radishes and jalapeno to bowl, let stand until cooled about 15 minutes; drain well.

Split baguette in half lengthwise.

Combine mayonnaise, lime juice and hot sauce; spread over bottom half of baguette.

Layer cucumber, drained vegetables, pickled ginger and tuna over mayonnaise.

Combine cilantro, basil and mint, sprinkle over tuna.

Cover with baguette top.
